Thanksgiving has come and gone. If you're like me, you cooked so much on Thanksgiving that you don't plan to cook for the rest of 2022. Truth be told, I'd rather study mathematics with your children each day than plan and prepare dinner. However, my family needs to eat. So this food for thought blog post is dedicated to a simple meal idea. This is not Julia Child's french masterpiece, this is a meal that I can whip together after emerging from my math stupor.
- Veggie Lentil Stew
- This is actually more of a casserole. You simply through a couple of cups of lentils, a cup of rice, 4 cups of chicken broth, chopped veggies (carrots, zucchini, squash, mushrooms, onions, whatever you have around), salt, parsley, thyme, and pepper into the instant pot for 20 minutes on high. Top with some cheddar cheese upon completion et voila!
This recipe is amazingly simple and delicious. Not to mention cheap, vegetarian, and undemanding, everything a homeschool mom needs during the weeks between Thanksgiving and Christmas.
